2 Catholic wedding questions!?

I am having a Catholic wedding in May. My fiance' is not Catholic but I am. Do we have to have the full Catholic wedding with communion or the typical 30 minute ceremony because he is not Catholic? Also, the Deacon told me I should have my wedding at 2:30 but that is a bit too early for me. Can I choose my wedding time? I would like it to be at 4 and Mes start at 6:30 at the church.
